MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Cracked Wheat Bread Categories: Breads Yield: 1 loaf 1/2 c Cracked wheat 1 1/2 c Boiling water 1 pk Dry yeast 1/3 c Warm water 1/4 c Shortening 1 1/2 ts Salt 2 tb Molasses 2 tb Honey 1 c Warm water 1 c Wholewheat flour 4 c All-purpose flour Cook cracked wheat in the boiling water for 10 minutes, till all the water is absorbed. Dissolve yeast in 1/3 c of warm water & let proof. Stir together shortening, salt, molasses, honey & the rest of the water & add to cracked wheat. Stir in the flours a little at a time. When the dough is stiff, turn out onto a floured board & knead for 10 minutes, use extra flour if necessary. Shape into a ball, place in oiled bowl, cover & let rise till doubled. Punch down & shape into 2 loaves. Let rise till doubled. Bake at 375F for 30 to 35 minutes. Cool on racks. "Beard on Bread" MMMMM
