* Exported from MasterCook * Crown Roast of Pork Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Main Pork Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 crown roast of pork (16 chops -- about 8 1/2 pounds) 2 garlic cloves -- cut into slivers 2 tablespoons olive oil Salt and fresh ground pepper to taste 2 cups apple juice or cider Apple and onion dressing (recipe to follow) Start by preheating the oven to 350 degrees F. Using a sharp knife, make small slits around the bottom of the chops. Insert the garlic slivers into the slits. Brush the pork with olive oil and season all over with salt and pepper. | Place the roast in a shallow roasting pan, covering the bone tops with aluminum foil. Pour the apple juice in the bottom of the pan and place into the oven, basting occasionally with pan juices. | After one hour, remove the roast from the oven and stuff the center with the apple onion dressing, place the pan back in the oven and continue to cook and baste for another 1 1/4 hours. | If you are using a thermometer, it should read 150 to 160 degrees F. in the thickest part, (cook 15 to 18 minutes per pound).When the roast is cooked, transfer to a serving platter, first dish out the dressing then secure the roast with carving fork and slice downward on both sides of the bone of each chop. | Yield: 8 servings - - - - - - - - - - - - - - - - - - NOTES : From RUGGERIO TO GO; SHOW #DR1A07
