* Exported from MasterCook * Grilled Sugar-Dipped Pineapple Recipe By : "The Barbecue! Bible" Serving Size : 1 Preparation Time :0:00 Categories : Fruits Grill Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 ripe pineapple 8 Tablespoons unsalted butter -- melted 3/4 Cup sugar 1 Teaspoon grated lime zest 1 Teaspoon ground cinnamon 1/8 Teaspoon ground cloves 1/2 Cup dark rum -- optional Preheat the grill to high. Cut the top of the pineapple, then cut off the rind. Slice the pineapple into 8 or 10 rounds. Using corer or paring knife, remove the core from each round. Place the butter in a shallow bowl. In a separate bowl combine the sugar, lime zest, cinnamon and cloves. Oil the grill grate. Dip each pineapple slice in melted butter, then in the sugar mixture, shaking off excess. Arrange the pineapple slices on the hot grate and grill, turning with tongs, until browned and sizzling, 5 to 8 minutes per side. Transfer the pineapple slices to plates or a platter. If using the rum, warm it in a small flameproof skillet on one side of the grill; do not let it boil or become hot. Remove from the heat and then, making sure your sleeves are rolled up and hair is tied back, light a long match and ignite the rum.
