                        CREAMY SWEET POTATO SALAD

   2       c            Mayonnaise
     1/3   c            Buttermilk
   2       tb           Lemon juice
   1       tb           Dijon mustard
   1       t            Sugar
   3       lb           Sweet potatoes -- cooked,
                        -peeled and cubed
   1       c            Peas
     1/2   c            Sweet red pepper -- OR green
                        -chopped
     1/2   c            Green onions -- sliced
   1       bn           Fresh spinach
   3                    Bacon strips -- cooked and
                        -crumbled

  1.  In a bowl, blend mayonnaise, buttermilk, lemon
  juice, mustard and sugar until smooth.
   2.  In a large bowl, combine sweet potatoes, peas,
  pepper and onions.
   3. Pour dressing over all and toss to blend.
   4. Chill at least two hours or overnight.
  
  TO SERVE: Spoon  salad into a large brown lined with
  spice and and top with bacon.
  
  NOTE:  The colors must make this a very pretty dish. I
