* Exported from MasterCook * COUNTRY HAM IN APPLE CIDER Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : S_Living Pork Main Dish Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 lb To 14-lb uncooked country Ham 2 Quarts apple cider 1 tb Whole cloves 1/2 c Firmly packed brown sugar 2 tb Prepared mustard Fresh parsley sprigs opt'l New Year's. Place ham in a very large container; cover with water, and soak 8 hours. Pour off water. Scrub ham in warm water with a stiff brush, and rinse well. Place ham, skin side down, in a large roasting pan. Pour cider over ham, and sprinkle with cloves. Insert meat thermometer into ham, making sure it does not touch fat or bone. Cover and bake at 325 degrees for 2-1/2 to 3 hours.Carefully remove ham from pan juices; remove skin. Place ham, fat side up, on a cutting board; score fat in a diamond design. Return ham to roaster, fat side up. Combine brown sugar and mustard, stirring well. Coat exposed portion of ham with sugar mixture. Continue baking, uncovered, 30 minutes or until meat thermometer registers 142 degrees (about 15 minutes per pound).Remove ham from roaster; discard pan drippings. To serve, thinly slice ham; garnish with parsley, if desired. Yield: 24 to 26 servings.NOTE: Country hams are produced by using a dry cure, and a long, slow smoking and drying process.
