Irish Salmon Sweet Potato Pie
1 large can salmon (pink, or canned makeral, catfish or better yet
,Mom's fish filets) put in bowl and keep all good bones, skin and
cartiledge, they are soft enough to be digestible.( on canned variety
not fresh or frozen fish)
Add to bowl
2 cups peeled chopped sweet potatoes
2 tbls. chopped onion
1/4 cup chopped parsley (fresh or dry if lazy)
1 cup fresh or frozen cut green beans
1 cup frozen peas
2 cups yogurt or cottage cheese.
4 hard boiled eggs, peeled and coarsely chopped.
1 tsp salt
Mix well, put in lightly greased (spray oil will do) and top with 2 cups
croutons or bread cubes. lightly tossed in olive oil
Bake at 350 degrees 30 minutes, then sprinkle with 1/4 cup parmesan
cheese.
Bake 15 minutes more until nicely browned or until vegetables are
tender.
Again freeze leftovers in portion sizes to enjoy later.
