Callahan's Irish Stew
3 lb.lamb (cut into 2 inch pieces)- beef, rabbit, venison, or even
poultry can be substituted but then it will not be a true Irish Stew!
2 Tbls. chopped onion, (optional) some feel they are not healthy for
pups, but I have reduced the amount and find they add necessary flavor.
2 cups finely chopped celery (very healthy for pups)
1 cup finely chopped parsley. (ditto for healthy)
2 cups finely chopped spinach leaves (fresh of course) frozen if lazy
1 cup finely chopped carrot (more if desirable, but I dislike carrots)
2 cups finely chopped turnips, parsnips or rutabaga, ( or combination of
all)
3 cups pototoes cut into chunks (do not peel)
2 tbls finely chopped garlic
2 tsp. salt
Brown meat in dutch oven or roaster along with onions. when brown add
other vegetables but not potatoes and cook 5 minutes. stirring.
Add 4 cups of vegetable broth, or meat broth (homemade or low sodium)
and simmer either in a 300" oven, or stove top until meat is tender.
Add potatoes last hour of cooking.
If desired more broth may be added for desired consistency.
Serve over kibble, rice or even noodles (but again, not autentic)
Freeze leftover in portion sizes for later meals. ENJOY!!!
