Hawaiian Sweet Bread

6 1/2 to 7 cups flour
3/4 cup mashed potato flakes
2/3 cup sugar
1 teaspoon salt
1/2 teaspoon ginger
2 teaspoon vanilla extract
2 pkg. dry yeast
1 cup milk
1/2 cup water
1/2 cup butter/margarine
1 cup pineapple juice
3 eggs

Set pineapple juice out to warm up to room temperature. Grease three 8 or 9
inch round cake pans. In large bowl, combine 3 cup flour, mashed potato
flakes, sugar, salt, ginger, vanilla and yeast. In medium saucepan, heat
milk, water, and margarine until very warm, 120-130F. Add warm liquid,
pineapple juice, and eggs to flour mixture. Blend mixture at low speed
until
moistened; beat four minutes at medium speed. By hand, stir in 3 cups flour
to form stiff dough. On floured surface, knead in 1/2 to 1 cup flour until
smooth and elastic, about 5 minutes. Place dough in greased bowl; cover
loosely with plastic wrap and cloth towel. Let rise in warm place, 80-85
degree F, until doubled in size, about 1 to 1-1/2 hours. Punch down dough.
Divide into three parts; form into round balls and place in prepared pans.
Cover pans; let rise in warm place until doubled in size, about 1 hour.
Heat
oven to 375 degrees. Bake 25-35 minutes or until loaves sound hollow when
slightly tapped. Remove from pans immediately.

Savory Party Bread

   1      pound         sourdough bread (round) -- unsliced
   1      pound         Monterey jack cheese -- sliced
     1/2  cup           butter -- melted
     1/2  cup           green onions -- chopped
   2      teaspoons     poppy seeds

Cut bread several times lengthwise and crosswise, making a grid like pattern,
without cutting through the bottom crust. Insert cheese between cuts.
Combine butter, onions and poppy seeds; drizzle over bread. Wrap in foil; place on
a baking sheet. Bake at 350 degrees for 15 minutes. Uncover; bake 10 minutes
longer or until the cheese is melted.

Banana Bread

1/3 cup granulated sugar
1/3 cup brown sugar
1/3 cup butter flavored Crisco
1 tsp. vanilla
2 eggs
2 large or 3 small, ripe bananas
1/4 cup sweetened coconut
1/2 tsp. salt
2 1/4 tsp. baking powder
1 3/4 cup all-purpose flour
1/2 cup rolled oats
3/4 cup chopped walnuts

Preheat oven to 350 degrees.  Cream sugars and Crisco.  Add eggs, vanilla,
and mashed bananas.  Stir in remaining dry ingredients, coconut, and
walnuts.  Pour into well greased loaf pan.  Bake 1 hour, or until toothpick
inserted in center comes out clean.

 Cranberry Bread

      Yield: 1 Loaf

      2 cup  Flour
  1 1/2 tsp. Baking powder
      1 tsp. Salt
    1/2 tsp. Baking soda
      1    Egg
    1/8 cup  Soft shortening
    3/4 cup  Orange juice
           Thin rind of 1/2 orange
      1 cup  Sugar
      1 cup  Cranberries
      1 cup  Nuts

Sift together flour, baking powder, salt and baking soda.  "MIX" in
blender egg, shortening, orange juice, orange rind and sugar.  Add
cranberries & nuts, for 2 cycles at "CHOP."  Empty into flour
mixture. Mix by hand until moistened.  Bake in a greased 9x5 pan at
350F for 50 to 60 minutes.

Apple Cranberry Nut Bread

      Yield: 20 Servings

      8 oz Bread Flour
      8 oz Whole Wheat Flour
  1 1/2 tsp. Salt
      2 Tbs. Sugar, white or brown
      1 tsp. Cinnamon
      1 tsp. Nutmeg
    2/3 cup  Applesauce
    1/2 cup  Apple juice
           (or Orange Juice)
    1/3 cup  Dried cranberries
      1 oz Chopped walnuts
  1 1/2 tsp. Yeast

Add ingredients to baking pan in order given..  Bake on basic/light
mode (4 hour). Drop in cranberries which have been coated with the
cinnamon and nutmeg after first knead. Add yeast to dispenser.
Makes a nice loaf for holiday giving or serving.

SOURDOUGH BEER BREAD

   2      cup             allpurpose flour

   1      Tbs.            Lecithin granules

     3/4  cup             Rye sourdough starter *
     1/4  cup             Flat beer
   2      Tbs.            Water

  Place in pan in the order given. Bake on basic bread cycle. This can
probably be timed. With only 2 cups of flour, this makes a small (14 oz)
loaf with a crunchy crust and a light interior.  Not a dense bread. It's a
 rustic looking loaf that ought to be just the thing with stews or hearty
soups.
* Rye starter: 2 cup Rye flour, 2 cup warm water, 1 pkg. yeast in a
glass container.  Leave at room temp for about 3 days stirring when you
think of it.  When it starts to smell like a brewery, you can refrigerate it.
Just bring it back to room temp before you use it.

Italian Sourdough Bread

Place ingredients in bread machine pan in order given. Use the "Bread
Rapid" or
whatever the setting is called on your machine for reduced cooking time.
* May need to be adjusted, depending on consistency of your sourdough
starter.
Dough should ball and just pull away from sides of pan during kneading.

Buttermilk Bread in ABM

I did this recipe 2 ways, the way it is entered and then a second time
using 1 cup real buttermilk for the powdered buttermilk and water.  I
really prefer the real buttermilk - there is a definite taste difference for
the better.
Layer ingredients in your ABM, wet first, then dry, ending with yeast.  Use
light or medium setting.

NOTES : This rises really high!  Might try cutting the yeast back just a
bit....

Dried cranberries are sometimes called "ruby raisins." SUCCESS HINTS: Place
dried cranberries away from water if baking on delayed time cycle. This
recipe can be baked with regular or delayed time baking cycles.

Raisin Cinnamon Bread for ABM

* Vital gluten can be found at health food stores and at some grocery
stores. It helps to make the bread rise and gives it a tender texture.

     Chop the apricots into small pieces, or use dates if you prefer. Place
all ingredients except raisins and apricots (or dates) into your bread maker
following manufacturer's directions. Add the raisins and apricots at
appropriate time; in a Zojirushi and most other bread makers, there is an
option for raisin bread that will allow the machine to beep when it is time
to add additional ingredients.

Cranberry Quick Bread

4 cups flour
2 cups sugar
1 Tbs.. baking powder
2 tsp. salt
1 tsp. baking soda
1/2 cups shortening
2 eggs
1-3/4 cups orange juice
2 Tbs.. grated orange peel
2 cups fresh or frozen cranberries, coarsely chopped
1 cup walnuts, chopped

Preheat oven to 350 Grease and flour 2 9"x5" loaf pans. In a large bowl,
mix flour, sugar, baking powder, salt and baking soda.  Cut in the shortening
with a pastry blender. In a medium bowl, beat eggs, orange juice and orange peel
with a fork; stir into flour mixture just until flour is moistened.   Gently stir
in cranberries and nuts. Spoon batter evenly into loaf pans. Bake 55 minutes
until toothpick comes out clean. Cool in pans on wire rack for 10 minutes.
Remove from pans and cool completely on rack.  Freezes well.

Banana Fruit Bread

1/2 cup butter, creamed
1 cup sugar
2 eggs, beaten
3 mashed bananas
1 1/2 cups flour
1 tsp. soda
1/4 cup chopped nuts
1/4 cup miniature chocolate chips
1/4 cup chopped maraschino cherries

Mix in order given and bake in greased 9x5 loaf pan for about 1 hour.  Bake
Mini muffins for about 15 minutes.

This also freezes well.

Cranberry Nut Bread For ABM

     1/2  Tsp.           Baking Soda
     3/4  Cup           Coarsely Chopped Cranberries
     1/2  Cup           chopped nuts (I use pecans)

Have all ingredients at room temperature. Measure orange juice, butter and
egg  into the bread pan.  In a medium mixing bowl, combine remaining ingredients
except cranberries and nuts. Add this mixture to the bread pan.  Then add
the cranberries and nuts. Set on the setting for quick breads.
