Pasta with Bacon & Hot Peppers

8 slices bacon
1/3 cup olive oil
2 each onions, thinly sliced
8 each Italian peppers or pepperoccinis,
seeded and chopped or sliced
3 cups canned crushed tomatoes
1/4 teaspoon salt
1 pound spaghetti, or capellini
3/4 cup Parmesan cheese

Cook bacon. Add oil & onion.
Add peppers & tomatoes & salt .
Serve over pasta. Sprinkle with cheese.

You may use a jar of spaghetti sauce if you want.

serves 6

Linguini with White Clam Sauce

1/2 each onion, medium, chopped
1 clove garlic, finely chopped
1 tablespoon margarine
1 teaspoon flour
1 6 1/2 oz. can clams, minced
1/4 teaspoon salt
1 pinch pepper
1 tablespoon parsley
Parmesan cheese
1/4 teaspoon basil
4 ounces dry linguine or spaghetti

Cook linguine according to package instructions.
Cook and stir onion in butter in sauce pan;
add garlic when onion is almost tender.
Continue to cook until onion is tender; stir in flour.
Add clams with liquid, salt, basil, pepper, and parsley.
Heat to boiling; reduce heat.
Cover and simmer for 5 minutes.
Serve sauce over hot linguine and sprinkle with cheese.
Serves 4

Don't Cook the Pasta Manicotti

1 pound ground Beef Top Round
1/2 cup onions, chopped
2 cloves garlic, finely chopped
4 cups tomato juice
1 15 oz. container cottage cheese, or ricotta
2 teaspoons oregano
10 ounces frozen spinach, (optional) thawed and drained
2 each eggs
1 8 oz. package manicotti shells, uncooked
1 teaspoon sugar
1/2 cup Parmesan cheese, grated
4 cups mozzarella cheese, grated
1 6 oz. can tomato paste

Brown meat with onion and garlic; drain.
Add 2 cups tomato juice, paste, oregano and sugar.
Simmer while preparing filling .

Filling: In large bowl, combine 2 cups mozzarella,
ricotta, spinach , eggs, and Parmesan; mix well.

Stuff uncooked shells.
Arrange stuffed shells in 9"x13" pan.
spoon sauce over shells.
Pour remaining tomato juice over all.
Cover with foil.

Bake 1 hour at 350� degrees.
Remove from oven. Remove foil.
Top with remaining mozzarella.
Let stand 15 minutes before serving.

Tip: You may do ahead and refrigerate.
Increase baking time to 1 1/4 hours.
