Fish

"Mahi Mahi"

  • 1 lb.Mahi Mahi
  • 1/2 cup tomatoes,diched
  • 1/2 cup onion,diced
  • 4 cloves garlic,minced
  • 1/4 cup black olives, sliced
  • 1/4 cup green olives, sliced
  • 2 Tbs butter
  • 3 Tbs fresh cilantro,chopped
  • /2 cup chablis
  • salt & pepper to taste


  • 1. Melt butter in large skillet over med.heat
    2.Add fillet and cook for 5 mintues.
    3.Turn and add garlic,onion,olives and cilantro.
    4.When oions become transparent,add wine.
    Note be careful when cooking wih wine on a gas range.Open flame will ignite the wine as it evaporates.

    5.Allow sauce to thicken.
    6. add tomatoe.
    7 Season with salt & pepper.
    8.Serve over yellow rice.

    This dish is dish that Joathan DeBoe put together using ingredients common in the Cuban Markets in Tampa. Mahi Mahi(aka Dolphin and Dorado) is a wonderful fish with moderate flavor and meaty, firm texture.
    Any yellow rice will work in this recipe.The fish fillet maybe cubed or left in large pieces.
