RASPBERRY NUT CAKE

This was one of Grannys favorites and always made for Christmas holidays.  This has been a favorite for several generations.  Originally the berries were picked and canned for use, later fresh berries were frozen especially to use later in this cake.  Fresh homemade raspberry jam is also a favorite!

2 Cups       Plain Flour
1 1/2 Tsp.   Baking Powder
1 Tsp.         Soda
1 Tsp.         Cinnamon
1/2 Tsp.      Salt
1/2 Cup      Margarine
1 1/2 Cup    Sugar
  3               Eggs
3/4 Cup      Butter Milk
1 Tsp.         Vanilla
1 Cup         Raspberries
1/2 Cup      Nuts (Chopped)

In large mixing bowl mix sugar and butter.
Add three eggs - mix well.
Add flour, baking powder, soda, cinnamon, salt - mix.
Add butter milk and vanilla - mix.
Fold in berries and nuts. (Hint - Coat berries and nuts with flour before adding to mixture so they don't fall to the bottom of cake.)

Bake in tube pan in preheated oven at 350 degrees until golden brown - 30 to 45 minutes.   Toothpick inserted in center will come out clean when cake is done.
