Mexican Bean Soup

1/2 lb. ground beef
1 med. sized onion, chopped
1 can (14 1/2 oz) whole tomatoes, chopped
1 can (15 oz) red kidney beans
1 can (7-8 oz) kernal corn
1 can (8 oz) tomato sauce
2 tsp. chili powder
1 1/2 c. water
crushed tortilla chips for topping

In a large saucepan, brown beef with onion. Stir in
remaining ingredients and simmer for about 30 minutes.
Serve topped with crushed tortilla chips.




Golden Onion Soup

2 c. quartered thinly sliced onions
1/2 c. margarine
1/4 c. flour
2 c. chicken broth
2 c. milk
2 c. shredded mozzarella cheese

In a saucepan over med. low heat, cook onions in
butter until tender, about 10 mins. Stir in flour
until blended. Gradually add broth and milk. bring
to a boil over med heat, stirring constantly. Cook
and stir for 1 min. Reduce heat. Add cheese; heat
until cheese is melted.
