1 C shortening
3 C sugar
2 Eggs
2 C pumpkin (small can)
1 tsp. salt
8 tsp. baking powder
4 1/2 C flour
1 tsp. ginger
1 tsp. nutmeg
2 TBSP cinnamon
1 tsp. vanilla
Mix all ingredients together. Spoon onto cookie sheet. Bake
for 8-10 minutes at 350 degrees.
ICING
1 C sugar
1 stick cold butter
6 TBSP Crisco
1 tsp. vanilla
1 C warm milk
Cream together, then slowly add the one cup warm milk. Frost
cookies.
This is a double recipe since it's hard to find a can of pumpkin
in the one cup size.
