| This recipe has become an old time favorate with my family. I make it between Thanksgiving & Christmas . It is served with toast. We eat it for Breakfast, Lunch & Dinner or for a snack. |

| 2-3lbs. Beef Bones (meaty & marbled with fat) 3-4lbs. Pork Roast (meaty & marbled with fat) 2 large Onions (pealed & left whole) 4 ribs Celery (left whole & with leaves left on) 1 Tbsp Salt 1 tsp. Sage 1 tsp. Thyme 2-3 Bay Leafs ------------------------------ 1 bag Pinhead Oatmeal (no substitutions) Water or Canned unsalted Broth 1 jar Coursed Ground Pepper ----------------------------- (optional) 1lb. Liver |

| A Large Dutch Oven with lid or Spaghetti Pot with lid A Long Handle Metal Spoon 1 Large Bowel 1 Large Vegetable Strainer 1 Meat Grinder (I use my Kitchen Aid mixer attachment) 1 Turkey Pan or suitable large pan A 9x24x2" serving pan lined with foil or (4) loaf pans lined with foil |

| Place meat with bones in the large Dutch Oven and Cover with water. Bring to a boil & Skim residue. ---------------- Cook Liver sperately in a pan covered with water until well cooked. Drain this liquid & discard. ---------------- Add: Onions, Celery with leaves, Salt, Sage, Thyme & Bay Leafs to Dutch Oven pot. And Turn heat down, & simmer - until well cooked (about 2-3 hrs.) with lid on the pot. Next: Discard Bay Leafs Place Vegetable Skimmer in large bowel. Place meat, onion, celery & other spices in the Vegetable Skimmer Drain (AND SAVE) Liquid into bowel. Next: Measure Cooled reserved liquid. You will need a total of 16 cups of liquid. (You can used water or, as I prefer, canned unsalted broth) ----------------- After meat & vegetables are cool - Grind all these ingreidents including the liver in Meat Grinder Discard Bones. |

| Next: Place the Pinhead Oatmeal in the Dutch Oven Add 8 cups of liquid. Stir well & bring to a slow simmer. Cover Continue: adding the liquid and stiring until all liquid is added. Cover pot each time. Cook oatmeal until spoon stands up straight in pot after stiring, (This process can take up to 1 1/2hrs to 2 hrs.) (I've found down through the years, that by covering the pot & adding the liquid helps to speed up the orginal time.) |

| Now the fun part. Take the Turkey pan or other large type pan and Mix the ground meat with the cooked oatmeal. Mixing in the Course Cracked Pepper, as you go along. (For Children under 5 - add 1 Tbsp.) (For Children over 5 - you may add up to 2 Tbsp.) (For Adults who like it peppery - I've added up to 1/4 to 1/2 cup of pepper) After ingredients are well mixed - place in a foiled line pan or divide into foiled line loaf pans. Place in Refrigerator & Chill overhight |

| Get yourself a cup of Coffee or your favorate liquid refreshment. Take a smoke if you like. Kick off your shoes & sit yourself down. It's been a long day. In recent years, I made this recipe in two days. I do the meat the first day or in the evening after dinner and the oatmeal the following day or in the evening after dinner. |

| Time to start cooking the Goetta for serving | ||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||
| In an Iron Skillet or any old NON-stick pan, spray with cooking oil or add 1-2 tbsp. of oil or butter. Place a good size portion of the Goetta in the pan. Cook until a brown crust forms under the Goetta - flip and Cook the other side until it is brown. (Because I cook this in large batches - I flip the Goetta often, so that, the crust is incorporated in the Goetta) Other's prefer it, served as a pancake. My Mother-in-Law, who taught me this recipe, likes to have leftover cold Goetta for lunch, as a sandwich. |
