Couscous Salad

Ingredients:

1 can Vegetable Broth
1 cup Couscous
1 can Chick peas (Garbanzo Beans) Drained
1 cup (4 oz.) Feta Cheese
1 cup green onions (including tops)
2/3 cup Italian Vinegarette Dressing
1 can Ripe Olives (sliced)
Lettuce

Directions:

In medium saucepan bring vegetable broth to a boil. Stir in couscous. Remove from heat, cover and let stand 5 minutes. Transfer couscous to large bowl and fluff with fork. Let stand 5 minutes and fluff again. Mix in chic peas, onions, olives and cheese. Pour dressing over mixture and toss with fork. Serve on a bed of lettuce.
