You can substitute Chicken for this, and it tastes wonderful that way, also!
Curried Meatballs
Meatballs:
2 lbs Hamburg
1 small onion, diced
1 tsp ground ginger
2 cloves minced garlic
2 tablespoons curry Powder
1 tsp salt
� tsp pepper
2 eggs
Meatballs:
1. Mix together all ingredients til well blended.
2. Form into meatballs and bake at 350 degrees until fully cooked.
3. Once cool, place into a large casserole dish.
Sauce: (Ingredients)
2 tsp veg Oil
2 tablespoons curry powder *(see below)
3 cups chicken broth
1 cup peas
2 tablespoons cornstarch
2 tablespoons water
Sauce: (Instructions)
1. Add veg oil and the curry powder to saucepan and heat briefly.
2. Add chicken broth and peas, heat til the peas are cooked.
3. Mix together the cornstarch and water, add to above, and keep stirring until thickened.
4. Pour the sauce over the meatballs, and mix well.
Good over cooked rice or egg noodles.
If you prefer to use Chicken instead of making meatballs, try doing the following:
Ingredients:
2 tbs olive oil or butter
1 small onion, diced
1 tsp ground ginger
2 cloves minced garlic
2 tablespoons curry Powder
1 tsp salt
� tsp pepper
4-6 boneless chicken breasts (depending on the number of people eating)
Instructions:
1. Put the butter or oil into a large skillet, add the onion, garlic, and spices, and let heat for a minute or so.
2. Place the chicken breasts into the skillet, cook for about fifteen minutes on each side.
3. Add the chicken broth, heat til it begins to boil, then add the peas. Cook another ten minutes until the peas are done.
4. Mix the water and cornstarch together to make a thin paste, and add to the skillet, stirring constantly til broth has thickened.
5. This may also be served over rice or egg noodles.
* The total recipe called for about 4 tablespoons of Curry Powder, but use enough according to your personal tastes. I generally use only about 2 tablespoons, but that's just the way I like it.
