Word's Help feature gives some of the keystroke shortcuts, based on the category. It's unclear whether a thorough search of the Help would lead you to a full list.

Would you like to know about all of the keyboard commands? It's built into Word itself.

Click on Tools, Macro, Macros, Macros In, Word Commands, List Commands, Run, Current Menu and Keyboard Settings.

A new document will open with the full, printable list of keystrokes.

Word also can be programmed with new shortcut keystrokes. For example, the Control-4 combination can be programmed to show a � sign.
