T'S ENCHILADA CASSEROLE

5 Pounds of Hamburger Meat
Onions (finely diced)
4 Packages of Taco Seasoning
24 Corn Tortillas
Chili Powder
19 oz Can of Enchilada Sauce
28 oz Can of Rotel Tomatoes
2 Bags of Monterrey Jack Cheese

Brown hamburger meat and onions.
Mix in taco seasoning, enchilada sauce, and rotel.
Mix in chili powder (to color of your liking).
In two 9 X 11 pan, spread 6 corn tortillas. Spread 1/4 of the hamburger meat mixture over the tortillas. Spread 1/4 of cheese over the hamburger meat. Repeat the layer of tortilla, hamburger mixture, and cheese.

Bake uncovered at 300 degrees for 30 minutes.
