3 pounds beef shoulder cut into cubes or ground chili meat 1/4 cup vegetable oil 1 cup choriso sausage 1 or 2 large onions, chopped up garlic cloves cut up 1 celery stalk chop up 2 cups of beef broth 2 cups of tomato sauce 1 bottle of Corona 1/2 cup of red chili powder 1/2 cup of green chiles chopped up 1 tablespoon of cumin 2 teaspoons of oregano Keep salt, pepper, cayenne, cumin brown sugar, and maybe another beer near for seasoning Brown the meat and then remove it from the pan. Then add the choriso in and fry it for about 5 minutes. Next add the onion, garlic, celery and saut� till soft, not brown Now put the meat, choriso, onions, garlic, and celery in to a big pot. Add the beef broth, tomato sauce, and beer and bring it to a simmer (do not get big boil going) and cook for 1/2 hour. Add the chili powder green chiles, cumin, and oregano, then simmer for 1 hour. Now taste the chili and season to taste with the remaining salt, pepper, cayenne, cumin, brown sugar. Always make sure you add the chili powder near the end of your cooking. |
