BRUCHETTA

1 French baguette, cut into 1/2 inch thick circles
Freshly grated Parmesan cheese
8 - 10 Plum or Roma Tomatoes, small diced (no seeds)
Fresh Chopped Basil (add to taste)
Fresh Pressed Garlic (add to taste)
Freshly ground black pepper (add to taste)
Kosher Salt, appr. 1 tsp.
Olive Oil, appr. � - � cup

Mix the tomatoes, basil, garlic, black pepper, salt and olive oil. Allow to sit for appr. 20 minutes.

Slice the bread loaf into � inch thick slices. On low broil toast both sides until barely brown. Spoon 1-2 teaspoons of tomato mixture onto the toasted bread. Stack grated parmesan onto the mixture. Lo broil for approximately 2 minutes (until cheese is melted).
