Pork Loin with Blueberry Onion Sauce

CRISPY RATING: NOT a difficult recipe, despite the title, and oh so very worth making

Ingredients
  • 1 pound pork tenderloin
  • 1 tablespoon butter
  • 2 small onions, sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon sugar
  • 1/4 cup port wine
  • 2 tablespoons balsamic vinegar
  • 1 cup blueberries, frozen
  • 1 cup cherry tomatoes, chopped

1. Heat broiler. Broil pork, turning occasionally until cooked through, about 20 minutes. Remove to platter; cover with foil to keep warm.

2. Meanwhile, melt margarine in a large skillet over medium-high heat. Add onions, salt and pepper; cook until onions are golden, about 10 minutes. Add sugar; cook until onions are caramelized, 3 minutes longer. Add port, vinegar, blueberries and tomatoes; heat to boil. Remove from heat.

3. Thinly slice pork and serve with sauce.

1. The original version of this used a 3/4 lb tenderloin, and the points were only 4 pts each.

2. From Mastercook (using 1 lb) - Per Serving: 247 Calories; 7g Fat (28.0% calories from fat); 25g Protein; 17g Carbohydrate; 2g Dietary Fiber; 82mg Cholesterol; 359mg Sodium. Exchanges: 0 Grain(Starch); 3 1/2 Lean Meat; 1 Vegetable; 1/2 Fruit; 1/2 Fat; 0 Other Carbohydrates.
