ZUCCHINI SQUASH CAKE
3 cups sugar
1-1/2 tsp cinnamon
3 Cups flour
1/4 tsp allspice
2 tsp baking powder
1/4 tsp cloves
1 tsp soda
1-1/2 cups oil
1/2 tsp salt
4 eggs I cup chopped nuts
3 cups peeled Zucchini, cut in cubes
Preheat oven to 350 degrees. Measure Sugar, flour, soda, salt and spices in large bowl. Set aside. Put 1/3 of oil, 2 eggs and 1 Cup Zucchini in blender. Process until zucchini is finely chopped. Pour into dry ingredients. Repeat 2 more times, adding nuts in the last few seconds. Mix liquid and dry ingredients together until well mixed. Pour into greased tube or bundt pan. Bake 1 hour or until done. Cool slightly. Invert.
CREAM CHEESE FROSTING
1 small pkg cream cheese
1/2 stick butter
2 cups powdered sugar
1/2 tsp vanilla
Beat at low speed to mix, then at high speed to blend smoothly.
