ZUCCHINI SQUASH
3 c squash, cut up (unpeeled)
Simmer for 7 minutes in salted water; drain.
Mix:
1/2 c sour cream
1 T margarine
1 T grated cheese
1/2 t salt
1/4 t paprika
Stir over low heat until cheese is melted. Add 1 beaten egg yolk and 1 T chives. Pour over squash. Cover with bread crumbs. Bake at 375 degrees for 15 minutes or longer, if needed. Serves 4 to 6.
