SPONGE CAKE (PERFECT FOR TRIFLE)

4 eggs, separated
1 c sugar
1/2 c orange juice
1 c flour
1 t baking powder

Beat egg yolks with sugar until no grains show, about 3 minutes. Add orange juice and beat another 2 minutes.

Add sifted flour and baking powder and beat another 2 minutes. Beat egg whites until stiff, but not dry. Fold whites into batter.

Bake in ungreased angel food or 9" square pan 30-40 minutes or until cake pops back when poked. Bake in preheated oven at 325 degrees.

Invert on funnel or bottle until cool. Run knife around inside of cake pan and invert on serving plate. Serve plain or with sweetened sour cream and berries.
