SHORT PASTRY

1-1/4 c: flour
1 stick oleo
2 T sugar
1 egg yolk
1/2 t salt
1 T lemon juice

Place flour on board. Make well in center. In well place sugar, salt, oleo (cut in pieces), egg yolk. Knead, gradually adding flour (also 1 T water, if necessary), after you have, sprinkled on the lemon juice. Wrap in plastic. Refrigerate for 20 minutes.

Roll to fit pan. Prick sides and bottom with fork. Bat at 400 degrees for 10-12 minutes until golden. Remove. Cool. Fill with cherries, cheese cake mixture, whatever.
