2-1/4 c sifted ww or white flour
1 t salt
1 c water
vegetable oil
Sift flour and salt into bowl; stir in water to make a stiff dough. Turn out on well-floured board; knead about 5 minutes. Pinch off small pieces of dough; let rest on board about 20 min. Roll each piece of dough paper thin to about a 5" circle. Fry circles of dough in 390 degree 1" oil in skillet until golden brown. Turn and brown other side. Dough will blister and bubble in fat. Drain well on paper towels. Serve warm. Puri is at its best the day it is made. Makes 2 doz.
