POTATO KUGEL

3# potatos
margarine
2 C chopped onion
2 t salt
1/8 t pepper
4 eggs sour cream

Peel potatoes. Grate. Preheat oven to 400 degrees. Saute onion in 4 T oleo for 5 min. Turn in to large bowl. Add salt, potato, pepper. Mix. Add eggs. Combine well. Melt 1/4 C oleo in skillet. Turn potato mixture in to skillet. Spread.

Bake uncovered 60 minutes or until top is crusty and golden brown.

Serve hot. Cut into wedges. Top with sour cream.
