OVEN-FRIED CHICKEN

Wash chicken and pat dry. Dip chicken pieces into buttermilk. Coat with cornflake crumb mixture. Place chicken skin side up in greased pan. Sprinkle with sesame seed. Bake uncovered at 375 degrees for 45-50 minutes or until done.

Alternate Method

Melt 1/4 c fat (half butter) in shallow baking pan in hot oven 400 degrees. Dip 2-1/2# fryer, cut in pieces, in Seasoned flour made up of 1 t salt, 1/4 t pepper, 1/4 t paprika and 1 c flour. Place chicken skin side down in pan. Cook uncovered 30 minutes. Turn chicken; cook uncovered 30 minutes longer.
