HAWAIIAN PORK

1 egg
2 T flour
1/2 t salt
1/8 t pepper
1 lb boneless lean pork, cut into 1" cubes
3 T lard
3 gr peppers, in strips
1/2 c pineapple chunks
2-1/2 T cornstarch
2-1/2 T soy sauce
Sugar to taste
1/4 c vinegar
1/2 c pineapple juice

Beat egg, flour, salt and pepper, together. Thoroughly coat pork in egg mixture. Brown on all sides in hot lard in frypan. Cover; cook slowly for 30 minutes. Boil green peppers 10 min, drain. Add green peppers and pineapple to meat; cover and simmer 10 min. Combine cornstarch, soy sauce, sugar, vinegar and pineapple juice; cook 2 minutes or until clear. Pour over meat mixture; simmer 5 min. Serve over chinese noodles or rice. Yield- 4 servings.
