FRESH APPLE CAKE

2 c sugar
1-1/4 c oil
2 eggs
3 c chopped apples
1 c chopped nuts
2 t cinnamon
2 t vanilla
1 t soda
1/2 t salt
2-1/2 c flour
 

Mix by hand in large mixing bowl. Cream together the first 3 ingredients. Fold in the apple, nuts and vanilla. Add the dry ingredients gradually until well mixed. Pour in 13x9" greased and floured pan. Bake 45 minutes at 275 degrees, then 15 minutes at 325 degrees.

SAUCE

1/2 c brown sugar
1 T flour
1/2 c water
1 T oleo
1/2 t vanilla

Combine sugar and flour in sauce pan. Blend in the remaining ingredients. Cook until thick. Pour hot sauce over cake when it is removed from the oven.
