BUTTER BATTER BREAD

3 Cups whole wheat flour
2 eggs
2 pkg yeast
1/3 Cup butter
2-1/2 Cups buttermilk
1-1/2 Cups oats
1/4 Cup molasses
2-1/2 to 3 Cups flour
1/4 Cup honey
2 Tbs melted butter
1 Tbs salt
 

Combine whole wheat flour and yeast. Heat buttermilk, molasses, honey, salt and butter till warm. Pour into mixing bowl. Add oats, whole wheat/yeast mixture and eggs. Blend until moistened. Beat 3 minutes at high speed. Stir in enough flour to make stiff dough. Cover; let rise till doubled (about 1 hour). Punch down; shape into 2 loaves. Place in greased casserole or bread pans. Cover; let rise till double (about 45 minutes). Bake at 375 degrees for 25 to 35 minutes or until, loaf sounds hollow when tapped.
