BASIC EGG NOODLE PASTA

4 large eggs (7/8 cup)
1 tbsp water
3-1/2 cups flour

Place eggs, water and flour in bowl. Mix for 30 seconds with beater. Remove beater and add dough hook. Knead for 2 minutes. Knead dough by hand for 30 seconds to 1 minute. Cover dough with dry towel and let rest 15 minutes before putting through noodle maker.

FOR SPINACH PASTA

Increase flour to 4 cups and add 10 ounces of frozen, chopped spinach that has been thawed, wrung with a towel to remove water, and ground in a fine food grinder. Prepare as above. FOR

WHOLE WHEAT PASTA

Increase water to 2 tbsp and use whole wheat flour. Make as with basic recipe.
