1 2/3 cups flour ¼ cup sugar (or 2 tsp. sugar
substitute)
2 ½ tsp. Baking powder ½ t. salt
1 tsp. Cinnamon ¼ tsp. nutmeg
1 egg 2/3 cup milk (or nonfat milk)
¼ cup shortening 1 cup chopped apples
Work shortening into dry ingredients. Add egg and milk.
Fold in apples. Grease muffin tins and fill 2/3 full. Bake 20-25
minutes at 450 degrees.
