3/4 c yellow cornmeal
2 c water
1/2 c light molasses
2 t salt
3 T butter
1 pkg yeast
1/4 c warm water
1/2 c wheat germ
4-1/2-5 c flour
In extra large saucepan combine cornmeal with 2 c water and salt, bring to a boil, stirring constantly. Remove from heat and add molasses and butter, stir; cool to lukewarm. Sprinkle yeast on 1/4 c water, stir and lot stand 5 min. Add wheat germ and 1/2 a flour, mix and turn out an floured board. Knead dough until smooth looking. Make into a ball, and place in a greased bowl, turn dough over so greased side is up. Cover and let rise until doubled. Punch down and shape into 2 loaves. Place in greased loaf pans and let rise until doubles. Brush with shortening. Bake at 375 degrees for 40-50 minutes.
