 I don't know if I would say this....  The spikes ability may be a
triggered one and therefore is he only has one counter on him, and you
sacrifice it he becomes a 0/0 and dies immediately.  I would not say that
you can until you find out for sure.

 I am not so sure about this.  I would like to know if you could
sac a creature during the instant phase after declaration of blockers.  I
actually think that in those rules it says something about a creature
becoming a 0/0.  I am not sure.  I think that this will be a difficult
rule to enforce.  I am not sure about the sacing ability of most
creatures.  I can understand a mana source.  but that is about the only
thing that I can think of offhand that would work as a sacrifice during
damage prevention.
