Recipes Using Meat


Here is a small but growing list of recipes involving meat:

Piccatina

  • chicken breast-cutlet
  • butter
  • flour
  • lemon

  • Coat chicken in flour. Melt butter in a frying pan. Just as butter has finished melting, add chicken, turning several times until cooked. Squeeze lemon over chicken. Eat!

    Gulyas, Gulasch, Golaz, etc.
    This Hungarian dish is actually called Porkolt, but since this is what the rest of the world calls it, I won't bother to confuse them. Gulyas, by the way, is actually a soup.

  • 250g stew beef
  • onion-chopped
  • garlic
  • 1 tsp majoram
  • 1 tsp caraway seeds
  • 1 tsp paprika
  • 1 spoon tomato paste or fresh tomatoes
  • a little bit of vinegar
  • optional: a chopped up green pepper
    Saute onion until golden. Add meat and brown. Add paprika and mix, be sure not to burn. Add water until just covered, spices, vinegar, and tomato. Cook until tender, about 45 minutes to an hour, and add salt. This dish improves with age, so I recommend making enough for leftovers. The amount of spice is just an approximation, add to taste. This dish can be served with soft white bread, polenta (my favourite and what we do in Slovenia), noodles, or boiled potatoes. Despite the long cooking time, it is not that difficult to make, for while simmering, one doesn't have to do anything, except stir on occasion.

    Pita Bread Sandwiches

  • onion-coarsely chopped
  • pepper-any colour
  • chicken-half a breast or less
  • chunks of tomatoes
  • Philadelphia cheese
  • Pita bread
    Saute onion and paprika. Add cubed chicken. When cooked, add tomatoes, salt, pepper. Toast pita bread, spread cheese on the inside, fill with the rest.

    Spaghetti alla Carbonara
    The eggless version

  • bacon
  • spaghetti
  • cream
  • parmesan
  • salt, pepper, nutmeg
  • optional: peas
    Saute bacon. Meanwhile cook spaghetti and peas. Warm cream. Mix in parmesan, salt, peper, and nutmeg. Mix everything together.

    Polnjene Paprike (Stuffed Peppers)

  • onions
  • some ground beef
  • parsley
  • pepper, salt
  • rice-uncooked
  • peppers
  • tomatoes
  • tomato sauce
  • egg
    Saute onions, ground beef and seasoning. Mix with rice, and egg, when cooled. (There should be more rice than beef in the mixture). Fill pepper 3/4 full, close with a tomato. Cook in tomato sauce until done (maybe 30 minutes). Eat with lots of sour cream.

    Chili con Carne
    Chili is easy to make and great for leftovers, since the flavour improves with age. So be sure to make extra.

  • onions
  • ground beef
  • can of kidney beans
  • chili, bay leaf, cumin, oregano, a bit of vinegar
  • tomatoes
    Saute onions, beef. Add everything else and cook for a while.
    To make vegetable chili, omit the beef and add more beans. Chopped up zucchini is a good addition.
