Breakfast, Brunch, and Dessert


A random assortment of recipes which don't really fit anywhere else

I love breakfast foods and anything that has to be baked, so here is an eclectic collection of recipes that I love.

Scones
This recipe is very simple, tasty, and healthy. What more could one want for breakfast?

  • 2 cups flour, half whole wheat, half white
  • 1 cup yoghurt (a bit more may be needed depending on how fluid it is)
  • 2tsp baking powder
  • 1/2 tsp baking soda
  • 1tbsp sugar
  • 1/4 tsp salt
  • 1/4 cup oil-can use less
  • optional-1tsp cinammon or vanilla, fruit-blueberries, cranberries, apples, plums, apricots, raisins...
    Mix dry ingredients. Add fruit. Add liquid ingredients, gently combine ingredients until just mixed. Place spoonfuls of batter on a baking sheet and bake for 20 minutes at 400F.
    To make even healthier scones: Omit sugar, replace white flour with a mixture of oatmeal, oatbran, and something called Dinkelkleie. It's some sort of grain. So basically, substitue any sort of grain you want. They're very good. I made them for our friend Mici, and then I had to make them for everyone else.

    End of the Semester Cookies
    It's the end of the semester, everyone is going home, and you have four sticks of butter left. What should you do? Enlist a friend-maybe she has butter too-and make garbage cookies!

  • 1 stick of butter
  • 1/3cup each of white and brown sugar
  • 1 egg
  • 1 cup and 2tbsp flour
  • 1/2tsp baking powder
  • 1/2tsp salt
  • mix-ins:ie. chocolate chips, M&M's, nuts, hot chocolate mix, chopped up chocolate bars, coconut....There is lots of room for creativity!
    To make fractal cookies, chop up a bar of Hershey's Cookies and Cream chocolate!
    Cream sugars and butter(if butter is hard, place it for 20s in the microwave). Mix in egg. Add remaining ingredients. Bake at 350F for about 10 min.

    Banana Muffins

  • 1.5 cups flour
  • five small ripe bananas
  • 1/2 cup yoghurt
  • 1/4 cup sugar
  • 1 egg-lightly beaten
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3 tbsp oil
  • some milk-approx. 1/4 cup
    Mash bananas with a fork. In a bowl, mix dry ingredients. Add remaining ingredients and stir gently until just mixed. Add milk as needed while stirring. Bake for 20 minutes in greased muffin tin, at 350 F. This makes twelve muffins.

    Strawberry Milk
    A delicious breakfast drink

  • 4 or 5 strawberries
  • 250 ml milk
  • sugar-depending on sweetness of strawberries
    Use a handblender to mix all ingredients. Drink immediately, otherwise milk will curdle.
    Variations: Instead of strawberries, use a small banana, or both. Yoghurt can be substituted for the milk.

    Pumpkin Pie
    This is a combination of different recipes, which I got off the back of various cans, so I have decided I can claim it as mine.
    For crust:

  • 1/2 cup butter
  • 1.5 cups flour
  • 1/2 tsp salt
  • 1/2 tsp cinammon
  • 1 tbsp sugar
  • approx. 4 tbsp water
    For filling
  • 1 can of pumpkin (16 oz. or 435g)
  • 3/4 cup sugar
  • 1 tbsp molasses
  • 2 eggs-lightly beaten
  • 1 tsp cinammon
  • 3/4 tsp powdered ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 1.5 cups evaporated milk or 2/3 cup powdered milk +1 cup water, or 3/4 cup cream+3/4 cup milk
  • 1 tbsp cornstarch
    For the crust:
    I don't proffess to be an expert crust maker, so this is a basic guideline. I do lots of illegal things like warming up the butter and adding more water to make the dough easier to work with. Technically, ingredients should be cold. Anyway, combine flour (and other dry ingredients) and butter by hand or with a mixer until a crumbly mixture is obtained-crumbs should be about the size of peas. Add water until dough can be formed into a ball. On a floured chopping board roll out the dough until it slightly larger in diameter than pie pan, approx. 5mm thick. Place greased pan on top of board and flip over, pushing dough into place and cutting off extras around the edges. Supposedly, if one brushed the dough with eggwhite, it won't get soggy. Also, prick the dough with a fork to prevent air bubbles.
    For the filling:
    This is very easy. Beat eggs. Add pumpkin. Add dry ingredents and mix. Then add the milk. Pour into unbaked pie crust and place in preheated oven. Bake at 450 F for 15 minutes and then at 350 for approx. 40 minutes, until filling has puffed up or knife come our clean (but be forewarned, a knife will decrease your pies aesthetic value).

    Mohnnudeln
    This is a wonderful Austrian dish, which comes under the category of Mehlspeisen, which are generally eaten for dinner, but make a great lunch while skiing. Although called noodles, they're actually a type of dumplings, and very easy to make.
    Serves 2

  • 1 medium potato
  • about 1/2 cup of flour (should be equal to volume of mashed potato
  • 2 tbsp butter
  • egg-lightly beaten
  • 1/4 cup of milk-or even less
  • 1 tsp salt
  • ground poppy seeds
  • powdered sugar
  • melted butter to pour on top
    Peel the potato and chop in small pieces. Boil until cooked, then mash. Mash the butter into the potato. Add flour, egg, milk, salt, and mix. The dough should be soft, but should not stick when handled. If it does, add more flour. Take dough and roll into sausage-like shapes (a bit like elongated gnocchi). Boil the noodles in salted water. They are ready when they float. Liberally apply poppyseed and sugar mixture (there should be quite a lot) and pour melted butter over. Not exactly healthy, but very good.
    Tip: Adding a little bit of farina(uncooked) makes the dough easier to work with. Tastes good too. I guess I add a few tablespoons and mix it in with the flour.

    Kaiserschmarrn
    An absolutely delicious meal-somewhat like a scrambled pancake. Makes a great dinner.

  • 2 eggs
  • 250 ml milk
  • 80g flour
  • 1tbsp sugar
  • butter
  • optional: raisins approx. 3tbsp
    Mix milk, flour, and sugar. Add egg yolks. Fold in beaten eggwhites. Heat a greased frying pan (grease with the butter-the more the better). Pour all batter into pan. When cooked on one side, flip. Start cutting into small pieces. Add more butter to pan, if needed. Austrians keep the pieces fairly large while Slovenians make them pea-sized. Serve with powdered sugar and one of the following: plum compot(Zwetschkenroester), apple sauce, cranberry sauce (Preislbeerkompott-I love this), or maple syrup.

    Breakfast Soup
    Created recently by Frances and me, this is in all essence really a smoothie, but we like to think of it as soup. It could actually make a rather nice soup on a hot summer day.

  • 4 oranges
  • 2 bananas
  • strawberries-optional
    Cut oranges into quarters and peel. Blend in a blender and then add bananas (peeled). Serve with strawberries floating in it. Banana slices would also be nice. Actually, any variety of fruit could be used. I would rather fancy mangos.
