Spaetzle

To make about 4 cups you will need:


3 cups all purpose flour
1 teaspoon salt
4 eggs
1 cup milk


In a large mixing bowl, combine the flour,1/2 tsp. salt, eggs, pour in milk
slow and stir constantly with large spoon. Until the mixture is real smooth
and makes bubbles.
Then bring 4 quarts of water with remaining salt to a boil.
If you have from a Kitchen supply store a Spaetzle- or Knoepflemaker
cost is under $10.
If you do, put Spaetzlemaker over boiling water and squeeze or push
depending on make of maschine, the dough into boiling water.
When the Spaetzle are swimming on top, remove, shock with cold water and
put in closed container ( saucepan), repeat until all dough is used up.

Should you not have a maschine, take a colander with large holes
and press the dough a few tablespoons at the time , directly into
boiling water. Use a big spoon and gently stir dough so it
won`t stick together and when Spaetzle float on top, remove.
Place into closed saucepan and repeat until all dough is used.

Serve Spaetzle with Schnitzel and a nice white-wine sauce, vegetables
and Salad.
