Nut Meals and Flours:Many of the recipes on these pages call for nut meals or flours such as pecan meal or almond flour. These products are often used in combination with protein powders as a substitute for wheat flour in baked goods or for breading. Through experimentation, each cook finds which flavor pleases best, and which is most appropriate for various dishes. I use pecan meal mixed with a little butter and sweetener as a substitute for graham cracker crusts in pies and cheesecakes. Without the sweetener, it is also palatable as a crust for quiche.
